La presente tesi ha lo scopo di indagare le modificazioni di carne fresche bovine e suine, sottoposte a temperature di refrigerazione e abuso termico. Durante lo svolgimento sono state prese in considerazione le modificazioni dell'atmosfera protettiva contenuta all'interno delle confezioni avvenute durante il tempo di conservazione. I risultati sono concordi con quanto riportato in letteratura, circa l'effetto provocato dalla temperatura in questa tipologia di confezionamento.
The present thesis aims to investigate the modifications of fresh beef and pork, subjected to refrigeration temperatures and thermal abuse. During the development, the modifications of the protective atmosphere contained inside the packages occurred during the storage time were taken into consideration. The results are in agreement with what is reported in the literature, about the effect caused by the temperature in this type of packaging.
