Oggetto della tesi è stato quello di realizzare una birra artigianale Gluten-Free con materie prime coltivate da aziende in toscana sfruttando l'energia geotermica del birrificio Vapori di Birra e riducendone, quindi l'impatto ambientale. La birra Gluten-Free è stata realizzata per emulare perfettamente la stessa birra artigianale, ma contenente invece glutine.
The subject of the thesis was to create a Gluten-Free craft beer with raw materials grown by companies in Tuscany by exploiting the geothermal energy of the Vapori di Birra brewery and thus reducing its environmental impact. Gluten-Free beer was made to perfectly emulate the same craft beer, but containing gluten instead.
