Riassunto
Carotenoids have shown a wide range of benefits for human health, including antioxidant activity, immune-stimulating activity, UV-protection in the skin, cardiovascular disease prevention, vision support, and pro-vitamin A supply. However, they are characterized by low bioaccessibility and bioavailability, causing a major fraction of the ingested carotenoids to be eliminated by the body. A solution can be found in the application of nanoencapsulation techniques, which have the ability to promote carotenoid solubilization and micellization, as well as preserving their nutritional value. This work is aimed to examine and summarize the most suitable and effective nano-delivery systems for the encapsulation of carotenoids.
