Negli ultimi decenni, l’affidabilità dei modelli di sicurezza del settore agroalimentare è stata fortemente messa a dura prova a causa di un elevato numero di crisi alimentari.
La sicurezza e la qualità degli alimenti, pertanto, sono diventate sempre più al centro delle preoccupazioni dei consumatori, delle strategie del settore e delle iniziative politiche dei governi.
Con il regolamento (CE) 178/2002, gli operatori del settore alimentare sono stati obbligati ad implementare un sistema di tracciabilità e rintracciabilità lungo la Food Supply Chain dei prodotti agroalimentari. Oltre alle norme cogenti, esistono norme di rintracciabilità volontaria come la certificazione UNI EN ISO 22005:2008 “Rintracciabilità nelle filiere agroalimentari - Principi generali e requisiti di base per progettazione di sistemi e attuazione”.
La ISO 22005:2008 si applica a tutto il settore agro-alimentare, comprese le produzioni mangimistiche, e rappresenta oggi la norma di riferimento per la certificazione di sistemi di rintracciabilità nel settore agroalimentare. L’implementazione di sistemi di rintracciabilità nelle aziende e nelle filiere agroalimentari costituisce uno strumento indispensabile non solo per rispondere agli obblighi cogenti, ma anche per valorizzare particolari caratteristiche di prodotto, quali l’origine/territorialità e le caratteristiche peculiari degli ingredienti, e per soddisfare le aspettative del cliente inteso sia come GDO, sia come consumatore finale.
Lo scopo del presente elaborato è la descrizione del sistema di rintracciabilità della filiera del grano duro e del grano tenero nella Società Cooperativa Agricola tra Produttori di Terre dell’Etruria.
Nel 2020, l’azienda ha ottenuto la certificazione UNI EN ISO 22005:2008 – no glifosate da parte dell’ente certificatore CCPB per garantire la rintracciabilità lungo l’intera filiera produttiva della pasta di semola di frumento duro, della semola rimacinata e della farina di grano tenero e per certificare i prodotti della filiera come prodotti realizzati senza l’utilizzo di glifosate.
L’organizzazione è riuscita a progettare un sistema di rintracciabilità e a garantire l’assenza dell’utilizzo di glifosate rispettando ed implementando la certificazione in essere e il documento tecnico DTP 21 “Prodotti agricoli ed agroalimentari vegetali ottenuti senza l’utilizzo di glifosate” dell’ente certificatore CCPB. Il prodotto oggetto di certificazione non può contenere residui di glifosate. Si considerano assenti residui inferiori a 0,01 mg/kg.
Durante i processi produttivi di produzione primaria, dalla preparazione del terreno pre-semina alla fine della raccolta del prodotto vegetale, non possono essere utilizzati prodotti fitosanitari contenenti il principio attivo di tale diserbante. Inoltre, deve essere garantita per tutta la filiera (aziende agricole, centri di stoccaggio, stabilimenti di trasformazione e confezionamento) la tracciabilità dei lotti di coltivazione, del prodotto stoccato fino ai prodotti alimentari ottenuti.
Nel mese di marzo del 2023, l’azienda ha richiesto all’ente certificatore (CCPB) l’estensione della certificazione UNI EN ISO 22005:2008 – no glifosate per riconoscere i prodotti di filiera anche con l’abbattimento del 100% dei Residui Massimi Ammessi di fitofarmaci.
Per tale estensione e per garantire la produzione di un prodotto a residuo zero, la Cooperativa, ha utilizzato il documento tecnico (DTP 10) dell’Ente certificatore CCPB come documento di riferimento. Per il 2023, i prodotti certificati come prodotti senza glifosate e a residuo zero sono la semola rimacinata e la farina di grano tenero. L'obiettivo di tale estensione è incentivare la diffusione di sistemi di produzione che aggiungono, ai già restrittivi principi della Produzione Integrata e delle buone pratiche agricole, l'attenta analisi e selezione di prodotti fitosanitari a basso impatto ambientale caratterizzati da una bassa residualità, fino all'ottenimento di prodotti privi di residui di fitofarmaci in quantità rilevabile. Il prodotto si definisce a "Residuo Zero" quando i residui di prodotti fitosanitari di sintesi chimica sono inferiori o uguali a 0,01 mg/kg (10 ppb).
Nel presente elaborato, oltre alla descrizione del sistema di rintracciabilità, sono stati evidenziati gli obiettivi specifici (con i relativi risultati) della campagna cerealicola 2023-2024 che l’azienda si è prefissata di raggiungere per la filiera no glifosate – zero residui.



In recent decades, the reliability of the agri-food industry’s safety models has been severely tested due to a large number of food crises.
Food safety and quality, therefore, have become increasingly central to consumer concerns, industry strategies and government policy initiatives.
With Regulation (EC) 178/2002, food business operators were obliged to implement a system of tracking and tracing along the Food Supply Chain of agri-food products. In addition to the mandatory standards, there are voluntary traceability standards such as the UNI EN ISO 22005:2008 certification "Traceability in agri-food chains - General principles and basic requirements for system design and implementation".
ISO 22005:2008 applies to the entire agri-food sector, including feed production, and is now the reference standard for the certification of traceability systems in the agri-food sector. The implementation of traceability systems in companies and agri-food chains is an indispensable tool not only to meet mandatory obligations, but also to enhance particular product characteristics, such as the origin/territoriality and the peculiar characteristics of the ingredients, and to meet the expectations of the customer understood both as a large-scale retail trade and as a final consumer.
The purpose of this paper is to describe the traceability system of the durum wheat and common wheat chain in the Agricultural Cooperative Society between Producers of Terre dell'Etruria.
In 2020, the company obtained the UNI EN ISO 22005:2008 - no glyphosate certification by the CCPB certification body to ensure traceability along the entire production chain of durum wheat semolina pasta, regrind semolina and soft wheat flour and to certify the products of the production chain as products made without the use of glyphosate.
The organization has managed to design a traceability system and to ensure the absence of the use of glyphosate respecting and implementing the existing certification and the DTP 21 technical document "Agricultural and agri-food products obtained without the use of glyphosate" certified by CCPB. The product to be certified shall not contain residues of glyphosate. Residues of less than 0,01 mg/kg are considered to be absent.
Plant protection products containing the active substance of this herbicide may not be used during the primary production processes, from the preparation of the pre-seeding soil to the end of the harvest of the plant product. In addition, the traceability of the growing lots, of the stored product up to the obtained food products must be guaranteed for the entire production chain (farms, storage centres, processing and packaging plants).
In March 2023, the company requested the certification body (CCPB) the extension of the UNI EN ISO 22005:2008 – no glyphosate certification to recognize the products of the supply chain with the reduction of 100% of the Maximum Permitted Residues of pesticides.
For this extension and to ensure the production of a zero residue product, the Cooperative has used the technical document (DTP 10) of the CCPB certification body as a reference document. For 2023, products certified as glyphosate-free and zero residue products are re-milled semolina and soft wheat flour. The aim of this extension is to encourage the spread of production systems that add to the already restrictive principles of Integrated Production and good agricultural practices, the careful analysis and selection of plant protection products with low environmental impact characterized by a low residual value, up to the obtaining of products free of residues of pesticides in detectable quantities. The product is defined as "Zero Residue" when residues of chemical synthetic plant protection products are less than or equal to 0.01 mg/kg (10 ppb).
In this thesis, in addition to the description of the traceability system, the specific objectives (with their results) of the 2023-2024 cereal campaign that the company has set itself to achieve for the chain no glyphosate - zero residues.
