La tesi tratta lo sviluppo di una bevanda proteica vegetale. Le bevande sviluppate hanno ottenuto il claim "ad alto contenuto di proteine". Gli isolati proteici utilizzati sono quelli ottenuti dalla soia, dal pisello e dall’avena. Tuttavia, l'uso di isolati proteici presenta sfide sensoriali (alterazione di gusto, odore, colore) e problemi di stabilità come separazione di fase e aumento della viscosità. Sono state sviluppate due bevande a base di mirtillo e frutti tropicali; inoltre, è stata valutata l'aggiunta di puree di frutta per migliorare le caratteristiche organolettiche. I risultati ottenuti hanno ottenuto delle valutazioni sensoriali conformi, ma non eccellenti. Inoltre, non è stato individuato un isolato proteico che primeggi sugli altri per la produzione di bevande proteiche.

The thesis focuses on the development of a plant-based protein beverage. The developed beverages achieved the "high protein content" claim. The protein isolates used were derived from soy, pea, and oats. However, the use of protein isolates presents sensory challenges (alterations in taste, smell, and color) and stability issues such as phase separation and increased viscosity. Two beverages were developed based on blueberry and tropical fruits, and the addition of fruit purees was also evaluated to improve organoleptic characteristics. The obtained results showed sensory evaluations that were acceptable but not excellent. Furthermore, no single protein isolate was identified as superior to the others for the production of protein beverages.
