Tale lavoro di tesi è incentrato sulla valutazione delle proprietà antiossidanti di prodotti funzionali formulati nel contesto del Progetto europeo FunTomP. Questi alimenti hanno lo scopo di valorizzare i benefici sulla salute della Dieta mediterranea, riformulandone i prodotti tradizionali a base di pomodoro e aggiungendo ingredienti innovativi, quali la polvere di oliva e la RuBisCO, per aumentarne il valore nutrizionale.
This thesis work focuses on evaluating the antioxidant properties of functional foods formulated in the context of the European FunTomP Project. These products aim to enhance the health benefits of the Mediterranean Diet by reformulating traditional tomato-based products and adding innovative ingredients, such as olive powder and RuBisCO, to increase their nutritional value.
