The aim of this work was to evaluate biochemical changes in wine grapes of 4 Italian grape varieties subjected to UVB treatment. Various techniques were used for metabolomic analysis, such as 1H NMR, HPLC and GC-MS, which made it possible, following statistical ANOVA and canonical discriminant analyses, to quantify different classes of compounds such as primary metabolites (sugars, amino acids, organic acids) and secondary metabolites such as phenols, anthocyanins and aromatic compounds. It was also possible to determine biochemical differences due to UV-B treatment and also between different varieties. The NMR spectroscopy analyses were carried out at the University of Life Sciences, Prague Czech Republic while the others at the Department of Agricultural, Food and Agro-Environmental Sciences, University of Pisa.
